I make this dessert instead of Chocolate Ice Cream when I’m lazy, or in a hurry, or if there’s no good chocolate in the house. (Typically because someone has eaten it, even though I stashed it) Ice cream machine is required.
Measurements are just a guideline you can adjust sweetness and richness to taste. The Extra Heavy Cream eliminates the need for eggs.
1 1/4 c. 40% milk fat heavy cream
1 1/4 c. whole milk
3/4 c. sugar
1/2 + unsweetened cocoa powder to taste
Combine Ingredients in a blender and pulse gently to combine them. Taste and adjust and transfer to your Ice Cream Machine.
Whipped Cream? Mini Marshmallows? A drizzle of Chocolate Syrup? Up to you.
Quick, easy, low fat, healthy, delicious!
In a stockpot combine:
1 medium onion, diced
1 tsp Cumin Seed
1tb canola oil
2 cloves garlic minced
1 1/2 lbs boneless, skinless Chicken Breast, cut into small cubes
1 large jalapeno Pepper, seeded and diced
1 tbs chili powder
Saute until chicken is somewhat cooked and onions are translucent
1 Qt. Chicken Stock
1 16 oz can diced tomatoes (not drained)
1 1/2 cups frozen or fresh corn
1 1/2 cups cooked black beans
Simmer 30-40 minutes
Lime Juice, salt to taste and Fresh Cilantro Leaves
Heat corn tortillas in a skillet until crispy, or use your favorite tortilla chips (Xochil “no salt” for me)
Top soup with broken chips or tortilla pieces
Not hard, just takes a LOT of time. 12 hours Kosher Salt and Cracked Pepper dry rub., 4-5 hours oak smoke @220, then 11 hours more @ 210. Gotta get the internal temp over 195 for Flat Cut and 205 for point cut (Burnt Ends), wrap in foil, then a towel and place in cooler for several hours to rest.
Chewy, Sweet, Salty, etc. Great for Milk and Cookies or serve w/ Vanilla Ice Cream!
Make the dough ahead and refrigerate 3+ hours, wrapped in Saran.
2 1/2 c. All Purpose Flour
1 tsp. salt
1/2 tsp. Baking Soda
1 c. Brown Sugar
3/4 c. white sugar
2 sticks unsalted butter, softened
1 jumbo egg
2 tbs water
2 tsp Vanilla Extract
1 1/2 c. dark chocolate chunks
1 c. broken up Rold Gold Thin Pretzel pieces. 1/4-1/2″
Mix Flour, Salt, Baking Soda in a Bowl, set aside
In Mixer, beat butter and sugars, add egg water, vanilla, mix again
Slowly add flour mix and combine slowly until blended
Add pretzels and chips and gently mix through the dough
Line cookie sheet w/ silicone, make 1 1/4 in balls, bake 10-12 min just until set
Cool on wire rack
It’s just better to make some things yourself, or maybe go to a small family restaurant down south someplace. If you find it somewhere in NY let me know,
1 lb. Dry Red Kidney beans
Add a Smoked Hock, or Smoked Turkey Wing or Drumstick.(Kosher salt if needed)
Cover w/ water and slowly simmer several hours, until almost tender.
In a separate pan combine:
1 med. onion diced
1 Jalapeno minced
2 lg celery ribs, diced
1 med Green Pepper Diced
1 1/2 lbs. Andouille Sausage sliced into rounds, then 1/2 moons
2 tbs veg oil
crushed red pepper (optional)
1 cup Low Sodium Chicken Stock
Saute veggies and sausage until onions are translucent, and sausage is lightly browned and add 1/2 cup chicken stock, simmer slowly
Add the beans to the pot and cover with some of their cooking liquid and simmer uncovered another 30-60 min, until liquid is absorbed, stirring often, and beans thicken up nicely.
Serve w/ Steamed Rice and Tabasco on the side
